Paneer Dum Biryani Preparation

This recipe preparation is just like process of  chicken dum biryani .Any biryani preparation,Marination is very important.Of course marination can take much time to prepare the recipe but that gives awesome taste and paneer pieces can absorb the masalas flavour and every bite of paneer we feel the taste of all ingredients.Adding cream is optional.Sour curd is important ingredient to  this recipe....We can add more veggies as per taste.


Ingredients




paneer 200 grs
basmati rice 250grs
oil 3 spoons
ghee 2 spoons
onion 2
green chillies 5
ginger garlic paste 1 spoon
turmeric pinch
salt to taste
red chilli powder 1 spoon
garam masala 1 spoon
curd 1 cup
mint leaves few
coriander leaves few
coriander powder 1/2 spoon
bay leaf 1
cloves 2
cardomon 2
cinnamon 1 inch 
tomato 1
sugar pinch
cream 1/4 cup
cashew nuts 10
biryani masala 1 spoon



Preparation



Wash onions and cut into long slit pieces.
Take a pan and put on the flame .
Add 1 spoon of oil and heat it.
Add half quantity of onion pieces and fry until it become to  dark golden colour.
Then put them on paper napkins for absorbing excess of oil.
 Wash green chillies and tomato and cut into small pieces.
Cut paneer into your wishing size pieces.
Make ginger garlic paste.
Make garam masala powder.
Make biryani masala powder.
Soak basamati rice for 30 minutes.Take a big mixing bowl and add  creamy curd and skim well.Then add salt,red chilli powder(1/2 spoon),turmeric,mint leaves,coriander  leaves,garam masala,sugar, coriander seed powder,ginger garlic paste,fried onions and biryani masala powder .
Finally add paneer cubes and mix all well.keep to marinate for 1 to 2 hours.
Cook the basmati rice.

Add 1 spoon of oil and salt at the time of water is boiling or before adding rice to boiling water. 
When 80% of  rice is cooked then remove from the flame and drain the excess of water.Rice not to be mushy.


Method




  • Take a thick bottom vessel or pressure cooker and put on the flame.
  • Add oil when vessel is heated.
  • When oil is heated add ghee.
  • Add masala ingredients like cloves,cinnamon,cardomom and bay leaf.
  • Saute it.
  • Add cashew nuts and fry until they become to golden colour.
  • Add onions and green chillies and fry for 2 to 3 minutes.
  • Add tomatoes and cook until they become to mushy.
  • Add some salt,pinch of turmeric and mix well. 
  • Then add marinated paneer and spread it on bottom of the vessel.
  • Then add 80% cooked basmati rice as layer.
  • Add saffron milk(optional) to get nice colour to the biryani.
  • Spread some coriander leaves and 1/2 spoon of  rose water(optional).
  • Add 1/4 cup of water .
  • Put the lid tightly like dum.
  • Put the flame medium for 2  minutes then turn into low for 15 to 20 minutes.
  • Put off the flame.Do not open the lid immediately after swith off the gas.
  • Keep for 20 to 30 minutes then open the lid and  gently mix the rice and paneer and serve with raita or any other gravy curry.
  • Of course without any side dish we can eat this delicious dum biryani....Enjoy !...   

Keep in the mind


We can make this recipe with left over rice also.But should be grainy not mushy..
Marination is very important.Marinate the  paneer pieces  at least for 1 hour.
Adding cream is optional.
If you want to like more spicy then add more red chilli powder,garam masala and other spicy ingredients.
We can use tomato sauce in the place of tomato pieces.Soak the basmati rice  to get long grains structure and  reduce the time of cooking also.

Chicken Egg Fried Rice Preparation

 This is very famous and children's favourite indo chinese recipe.Now a days not only children , every one like to eat this type of fried rice recipes.We can add boiled chicken or fried chicken.Better to cut chicken into small pieces.Boneless and breast pieces are better to make this fried rice.We can add any vegetables what you like and no need to boil completely.Semi cooked veggie are gives good taste.

Ingredients


basmati rice 250 grs
oil for deep fry
onion 1
carrot 1
capsicum 1
chicken (bone less) 100 grs
soya sauce 1spoon
vinegar 1/2 spoon
green chilli sauce 1 spoon
ajanamoto pinch
salt to tast
pepper powder to taste
ginger garlic paste 1/2 spoon
egg 1
corn flour 2 spoons



Preparation


Wash chicken very well and cut into small pieces.
Marinate the chicken adding salt,pepper powder,corn flour and egg and mix all well.
Marinate this chicken for 30 minutes.
Wash remaining veggies and cut into small pieces.
Make ginger garlic paste.
Cook the rice and keep aside to cool.
Do not cook the rice over.Cook only 80 percent(not grainy).Not sticky
Left over rice is better.


Method



Take a pan and put on the flame.
 when pan is heated Add oil for deep fry.
Add marinated chicken pieces to heated oil and fry for some time.
Fry the pieces in low or medium flame.
Remove the chicken pieces from the oil when they fried well.
Take a thick bottom vessel or pan and put on the flame.
Add 2 spoons of oil and heat it.
When oil is heated add giger garlic paste and fry for 1 minute.
Then add onion pieces and saute it.
Then add finely chopped carrot and capsicum pieces and fry for some time.
Do not need to fry for long time.Only saute for 2 minutes.
Then add beaten egg and leave it for 30 seconds and then mix with veggies and saute for 1 minute.
Then add fried chicken pieces .
Add soya sauce,green chilli sauce,pepper powder and salt to taste.
Finally add cooked rice and mix all well.
Add vinegar and taste the recipe.
If salt is not enough add some more salt .
Finally add spring onion pieces(optional)...
Tasty chicken fried rice is ready to eat with tomato sauce or any  kurma......




Keep in the mind



We can use basmati rice or normal rice to prepare this recipe.
Take veggies ,what you like...
Take finely chopped ginger and garlic pieces in the place of ginger garlic paste.
Left over rice is best for to make this recipe.
Add cool and non sticky rice only.
Adding ajanamoto is optional.

Egg Fried Rice Preparation(quick n easy way)

This is one of the children favourite recipe.I am preparing this recipe very easy and quick way to prepare with in few minutes with very few ingredients.If you have enough time to prepare this recipe  you can add carrot,capsicum,green peas and finely chopped garlic in the place of ginger garlic paste.


Ingredients




eggs 3
Basmati Rice  1 glass 200mg
 oil 2 spoons
ghee 1 spoon
ginger garlic paste 1/2 spoon
tomato 1
onion 1
green chillies 3
spring onions few
salt to taste
vinegar 1/2 spoon
pepper powder 2 pinches


Preparation



Wash onion,green chillies and tomato and cut into small pieces.
Wash the rice and add 2 glasses of water (double quantity of the rice) and cook and keep to cool.


Method



1.Take a pan,put on the flame.
2.when pan is heated add oil and ghee.
3.When oil is heated add finely chopped onion and green chilli pieces.
4.Fry until onion pieces become to light golden color then add ginger garlic paste and fry for 30 seconds.
5.Add tomato pieces and cook until tomato pieces become to soft.
6.Take a bowl and collect egg yolks and beat well.Add pinch of salt and pepper powder.
7.Add this beaten egg yolks and cook well.
8.When egg yolks fried well then add cooked rice.
9.Add vinegar,salt and pepper powder and mix all well.
10.Keep to cook for 2  minutes.
11.Finely  add chopped spring onions .
12.Taste the rice if salt is enough or not.
13.Add salt and pepper powder according to your taste.
Enjoy..! eating this hot egg fried rice with tomato sauce.....


Keep in the mind



Adding ghee is optional.
If basmati rice is not available do with ordinary white rice also.
Leftover rice also use be used for this recipe.

Kobbari Thalimpu Annam(White Coconut Rice)

This is one of the  very easy and quick preparing recipe.In festival days especially in Devi Navarathrulu we prepare it as prasadam.This Kobbari annam(coconut rice)is white in colour and  ghee smell tempts us  to eat eagerly.Adding cashew nuts and dals are increases the tasty of the recipe.So that fry  correctly till they  become to golden colour.


Ingredients



rice 1 cup
grated coconut 1/2 cup
ghee 5 spoons
mustard seeds 1/4 spoon
cumin seeds 1/4 spoon
urad dal 1/4 spoon
chana dal 1/2 spoon
cashew nuts 1/4 cup
curry leaves few
green chillies 5
salt to taste


 Preparation




Take a fresh coconut and grate it .Do not use frozen coconut.
Wash the rice 2 times and drain the water and add 2 cups of water and cook in the pressure cooker and cooking vessel till rice become soft(not so soft).
Keep to cool.
Wash curry leaves and keep aside.


Method


1.Take a cooking vesssel or kadai.Put on the flame.
2.When kadai is heated add ghee.
3.When ghee is melted add mustard seeds.fry till they started to splutter.
4.Then add cumin seeds,urad dal and chana dal and fry till dals become to light golden colour.
5.Add cashew nuts and fry till it become to light golden colour.
6.Add chopped green chilli pieces and curry leaves.
7.Then add grated coconut and put off the flame.
8.The vessel heat is enough to fry the grated coconut.If you fry on the flame, the grated coconut colour may be changed(not remains in white colour).
9.Then add cooked rice  and salt and mix all well.
10. Take care when mixing the rice and grated coconut that should be mixed well.
11.Taste the salt. If salt is not enough add some more salt and mix all well.
12.This rice is very tasty and easy to prepare as prasadams also.This is one of the  parasadams in Navaratri Naivedyalu.....


Keep in the mind


We can add ginger pieces at the time of seasonings.Adding ginger is optional.
Add coriander leaves also.Finely chopped coriander leaves add at the end of the recipe.
Do not fry grated coconut and cooked rice that may be change the colour of the recipe.Add rice only after put off the flame.

This is very delicious and yammy dish. Many people know about this recipe "coconut rice".They like to make this rice with grated coconut .But Iam using coconut milk instead of grated coconut.Rice absorb the coconut milk completely and gives very special taste and smooth texture to the rice. You cannot forget that taste once you have it.Definitely you will try to make coconut rice with coconut milk. Of course the preparation will take much time and also increases the burden of work.But after completing the recipe ,I difinitely telling that you are totally forget all your hard work and fatigue.You should enjoy the recipe  taste and completely satisfy on your preparation.

Nuvvula Pulihora నువ్వుల పులిహోర

Ingredients

rice                    1/2 kg
sesame seeds     50 grs
turmaric             1 spoon
salt                     to taste
tamarind            70 grs
jaggery               small piece
oil                       5 spoons
mustard seeds     1 spoon
chana dal            1spoon
urad dal              1 spoon
peanuts               2 spoons
curry leaves        some
green chillies      6
red chillies          6
  
Method

1.roast sesame seeds in a pan.
2.when sesame  seeds became to light brown colour( gives good smell),then put sesame seeds in a jar make a fine powder.
3.soak the tamarind in a glass of water.
4.after some time(15minutes) add 2glass of water in tamarind and make tamarind juice.add salt and small pieces of jaggery and boil until juice became very thick(honey like consistency).put off the flame.
5.wash the rice two times and cook the rice with l liter of  water.
6.put a pan on a stove .
7. add oil ,after heating the oil add green chillies and fry them.
8.add mustard seeds when they start splutter add red chillies,urad dal,chana dal and peanuts.
9.when dals became into brown colour  add cashew nuts , turmaric and sesame powder.
10.finally add asafoetida and curry leaves.put off the flame.
11.add cooked rice and tamarind juice .mix very well.

This is famous old sweet.I think this may be the first sweet was prepared by our ancestors.Most of the Indians know this dish and like to prepare  in festivals as prasadam(naivedyam).

Miryala pongali కట్టె పొంగలి

This is tamilian's  traditional dish(pongal), gives lot of relief from routine break fast items like idle,dosa and upma. this is strong diet and has more calories( because of ghee) but nutrients diet for children .If you start day with this tasty break fast makes you energetic throughout the day.

rice                       1cup
green gram
(moong dal)         3/4cup
salt                        1spoon(to taste)
pepper seeds       1/2spoon
oil                         4spoons
ghee                      3spoons
mustard seeds     1/4spoon
cumin                   1/4spoon
ginger                   small pieces
green chillies       3
curry leaves         some
cashewnut           10

Method

1. Take rice and green gram in a bowl.wash them twice.
2.  add nearly 5cups of water and  cook in the rice cooker(for make   smooth mixer of rice and dal).
3. take some pepper seeds(half of the quantity) make  into fine powder.
4. eating pepper gives lot of benefit to the body.some people dont like to eat pepper.if we make the powder they can take without any dislike.and also  pepper powder gives some spiciness to the pongal .
5 .cut ginger and green chillies into small pieces.
6. add oil in a pan ,after heating the oil add ghee.
7. when  ghee is melted add mustard seeds,when they began to splutter add cumin ,pepper seeds,cashew nut.
8. when cashew nut turn into golden brown color add ginger and green chilles pieces . after that add curry leaves
9.add rice and  dal mixture,pepper powder.finally add  salt to taste.
serve it hot and have this  with coconut chutney .enjoy eating this delightful recipe .

Curd Rice

It is a traditional dish ,very famous and healthy one.In telugu we named as daddojanam( దద్దోజనం).Main ingredient of this dish is curd.sweet and creamy curd gives delicious taste to this recipe.dont use sour curd.better to use fresh curd.


ingredients

rice                         1cup
curd                        2cups
salt                          to taste(1/4spoon)
oil                           1spoon
mustard seeds         1/4spoon
cumin                      1/4spoon
urad dal                   1/4spoon
cashewnut               6
ginger                      small piece
green chilles            3
curry  leaves            some
coriander leaves      some
grated carrot           1spoon   
Method

1.add 2cups of water into rice(1cup) and cook it .cook the rice softly  .
 2.cut green chillies and ginger into small pieces.
3.add oil into pan .after heating the oil add mustard seeds .
4.when began to splutter add cumin seeds, urad dal ,cashew nuts.
5.when urad dal and cashew fried, add green chillie pieces ,ginger pieces let it fry for while after that add curry leaves and put off the flame. 
6.add cooked rice , salt and mix all ingredients very well.keep it aside to cool. 
7.dont add curd when rice is hot.
8. mix 1/4cup of water into curd and churn this mixer very well add this into rice.stir rice and curd very well.
9. finally add coriander leaves and grated carrot ,pomegranate seeds(if you like) .
