amaranthus pulusu



Amaranthus pulusu (thota kura pulusu)is a very famous dish in andhra pradesh.This is very easy recipe .We can  prepare this recipe with in a short time. This is traditional recipe In olden days people use to eat amaranthus pulusu with ragi sankati.This is good combination  and also gives strong body.Amaranthus is a leafy vegetables which one has very good nutrients values.So this recipe is also have very good for useful in weight loss treatment and low calories(add less oil) and  fat free .


Ingredients



amaranthus 2 cups
onion 1
green chillies 4
tomato 2
tamarind 3 flakes
turmeric pinch
salt to taste
red chilli powder 1 spoon
sugar  14 spoon
water 4 cups
oil 2 spoon
mustard seeds 1/4 spoon
cumin seeds 1/4 spoon
garlic 10 cloves
dry chillies 2
urad dal 1/4 spoon
chana dal 1/4 spoon
curry leaves few



Preparation


Wash amaranthus with water.Add 1 spoon of crystal salt in the 1 liter of water.Keep the amaranthus in this water for 15 to 20 minutes.
Wash tomatoes,onion and green chillies.
Cut the onions into small pieces.
Cut the tomatoes into 5 to 6 pieces.
Cut the green chillies into 2 pieces.
Cut the amaranthus leaves into medium size pieces.


Method


1.Take a thin bottom vessel or pressure pan.
2.Add all chopped vegetables like tomato pieces,onion and green chilli pieces,amaranthus pieces.
3.Add tamarind flakes,turmeric,salt,red chilli powder,sugar and 4 cups of water.mix all well.
4.If you are using pressure pan cook this till 2 to 3 whistles.
5.If you are using thin vessel cook till all vegetables become tender.
6.Cook in thin  vessel may have chance to add more water than cooking in pressure cooker.
7.Add water if required.
8.Open the cooker lid when pressure completely comes out.
9.Mash the vegetables and taste the pulusu.
10.If salt is not enough add salt.If any ingredient require you can add at this time.
11.curry  constitency should be like pulusu constitency(watery).
12.Take a pan and put  it on the flame.
13.Add oil in the pan.After heating the oil add  mustard seeds .
14.When they started to crackle add cumin seeds and dry chillies.
15.After that add garlic cloves.fry for 1 minute.
16.Add urad dal and chana dal .fry till they turn into brown colour.
17.Add curry leaves.Put this seasonings to pulusu and mix all well.
18.This is very good recipe to eat with roti as well as rice.


Keep in the mind

In this recipe there is no need to cut the vegetables into very small pieces.Because we can blend or mash the vegetables after they cooked well.
You can use mixie to make  fine paste.Other wise use masher to mash the vegetables (not for completely mash). 
Take care when adding the garlic cloves in the oil for fry.
We should remove upper layer of garlic cloves or should use garlic cloves after they mashed.Other wise garlic cloves can spultter in the  oil.
If you do not like to add sugar in this recipe you can avoid it.Addin g sugar is a optional.
